Stone fruit season is well underway, which means juicy peaches, golden mangoes, sweet apricots, and more are front-and-center in grocery stores. This time of year, I eat as many peaches as I can — over the sink, sliced, and in desserts. One of my favorite dessert combinations is peaches and cream, and what do you know — it seems like it might be one of Costco’s, too.

The popular warehouse knows how to do seasonal desserts (have you tried its new Strawberry Cheesecake?). It should come as no surprise, then, that earlier this month fans spotted a new Peaches and Cream Bar Cake. The “light and fluffy” cake is a “must-try,” according to several members. As your resident Costco superfan, I obviously rushed to get my hands on one too. Here’s my full review.

What You Should Know About the Kirkland Signature Peaches and Cream Bar Cake

Costco has a few different flavors of its bar-style cake (including this maple-flavored fall release). The latest one features three layers of vanilla cake filled with whipped cream and a peach compote between each layer. The top is finished with a peach glaze and white chocolate curls. It looks like pure sunshine.

The cake is located in the refrigerated section of the bakery, and it retails for $18.99. While it’s a bit more than Costco’s custom 10-inch round cake, which costs $10.99, the bar cake weighs an impressive 39 ounces and serves a large group (about 16 to 20 people). That breaks down to roughly $1 per slice (although it’s slightly more online). It could easily be your plus-one to any summer party.

My Honest Review of the Kirkland Signature Peaches and Cream Bar Cake

As soon as I got my hands on this cake, the very first thing I did was pull out a plate and cut a slice so I could get a peek at all those layers. At first look, the cake is stunning. The alternating layers — with cake, peach jam, and cream — are clean and beautiful. 

As for taste, it’s just divine. The cake is a moist yet still fluffy sponge cake, and the cream isn’t sweetened, which really works with the sweetness from the peach jam. The jam is not too thin nor thick, and reminds me more of a purée than a jam because of its consistent, smooth texture. Although I love cake in all forms, I don’t like a dessert that is too sweet — and this one is just as I like it. 

This is the kind of cake that won’t weigh you down because it’s very light and fruity — and for that very reason, it’ll be my dessert of choice to bring to cookouts all summer long.
